Masala Dosa-A Healthy Breakfast to Relish

Dosa the Indian crepe made with rice and lentil is perhaps one of those most popular foods not just in India but probably all over the world. And that is the reason this scrumptious dish is listed in the world’s most tasty foods.


Though there are different varieties of Dosa available such as Rava Dosa, Podi Dosa, Paper Dosa, usually Masala Dosa tops the list for many of us. The Masala Dosa differs from the normal one especially by its filling usually prepared with potatoes, onions and spices. This Dosa is soft and spongy from inside but very crispy from outside. This crepe is best served with Coconut chutney.

Ingredients for the Dosa Batter:
Boiled Rice- 1 1/2 cups
Urad Dal – 1/2 Cup
Raw Rice- 1/2 Cup
Toor Dal- 1 1/2 Cups
Fenugreek seeds – 1/2 tsp
Bengal Gram -2 tbsp

Ingredients for the Masala Dosa Filling:
Onions chopped – 3
Potatoes – 4-5
Mustard seeds – ½ tsp
Chopped green chilies – 1 or 2
A pinch of Asafetida
Coriander leaves- 2 tbsp chopped
Bengal gram – 1 tbsp
Cumin seeds – 1 tsp
Ginger chopped 1 or 1/2 tsp
Curry leaves – 10-12
Turmeric powder – 1/2 tsp
Oil and Salt

Ingredients for the seasoning:
Oil -2 tbsp
Mustard – 1 tsp
Urad dal -3/4 tsp
Bengal gram – 3/4 tsp
Asafetida – A pinch

Procedure for Preparing the Batter:

For the batter soak Urad dal, Fenugreek seeds, Toor dal, Bengal gram, par boiled and raw rice in water for 4-5 hours. Next wash the mixture well and add a little salt before grinding to make a smooth texture. Leave the mixture to ferment overnight.

Method for Preparing the Masala Dosa Filling:

Boil and mash the four to five potatoes. Next chop the onions lengthwise and finely chop the green chilies and ginger. In a pan add mustard seeds, Asafetida, Urad dal and Bengal Gram. Once the dal turns dark golden, add the curry leaves, ginger, green chilies and onions and sauté till the onions turn pink. Finally add the tomatoes, salt and turmeric. When the gravy starts to boil add the mashed potatoes and simmer the flame for about 5-6 minutes.

Preparing the Masala Dosa:

Add some oil on a hot tava and pour a small quantity of Dosa batter using a ladle. Spread the batter throughout the pan using the back of the ladle and drizzle some oil all over the Dosa. Once the Dosa turns dark brown, place some Masala Dosa filling in the center and fold the Dosa. Your Masala Dosa is ready to be served. It is usually served with chutneys and sambar.
